It is usually eaten alongside dishes like jollof rice, fried rice, custard, akamu (pap) and so many others.

How to make MOI MOI with palm oil and egg

Ingredients:

1. 2 cups of white or brown beans

2. 1 medium red pepper

3. 1 piece of tatashe pepper (red bell pepper)

4. Half teaspoon of ground nutmeg

5. 1 large sized onion or 2 medium sized ones

6. Some palm oil

7. 1 large egg

8. 2 tablespoons of tomato paste

9. Some boiled eggs with the shells removed

10. Fish or chicken stock

11. Salt (to taste)

12. Uma leaves (Banana leaf)

 

Procedure

1. Soak the beans in water for about 30 minutes to 1 hour, this is done no matter the method used to prepare the dish.

2. Peel the skin of the beans by rubbing together, dispose and rinse well.

3. Blend the beans with the pepper, onions, tatashe pepper, ground nutmeg and tomato paste. The Moi Moi is probably going to taste as if the salt is not enough, don’t be worried, it’s normal.

4. Add some water to the mix and also add a whisked egg and the stork.

5. Heat the palm oil in a small pot before adding it to your mix and stir until the oil properly combines.

6. Add some more water next and salt to taste. Mix again for about 1minute. Scoop and serve into the Uma leaves, add one boiled egg each into the Moi Moi in the leaves. Wrap it and start cooking. Moi Moi is cooked by steaming. Make sure to pad the base of the pot and add a small quantity of water. It is advisable to cook your Moi Moi for at least one hour before checking it.

 

How to make sea food Moi Moi

Ingredients:

1. 2 cups of brown or white beans

2. 1 medium sized pepper

3. 1 piece of tatashe pepper

4. 1 large onion or 2 medium sized onion

5. 1 piece of mackerel

6. 1 cup of crayfish

7. 1 cup of eja sawa (dried fish)

8. 1 cup of smoked prawns

9. Vegetable oil

10. 2 tablespoons of tomato paste

11. Fish stock

12. Uma leaves (Banana leaves)

13. Salt (to taste)

 

Procedure

Basically, the cooking procedures are the same as the ones used in making Moi Moi with palm oil and egg.

1. Cut up the mackerel into pieces and rinse the smoked prawns and eja sawa.

2. Boil them together so as to get a great tasting stock and season with seasoning cubes, onions, and salt.

3. This time, instead of adding palm oil to the mix, add 3 serving spoons of vegetable oil.

4. Break the fish apart with your hands and add to the mix. Mix again, Scoop and serve into the Uma leaves.

5. Start cooking.

Moi Moi, which is also known bean pudding in English, is a great accompaniment dish eaten in Nigeria. It is usually eaten alongside dishes like jollof rice, fried rice, custard, akamu (pap) and so many others.
